Abstract
Insect consumption can provide an important source of protein in human diets, and thus may representan important untapped food source for decreasing nutricional deficiency. The potential dietary contribution of Gryllus peruviensis (Orthopera: Grillidae) has been evaluated and was found to be: protein 66.9, eructe fiber 13.0, ether extract 8.1, ashes 2.8, and nifext 9.2 %. The digestibility in pepsin was 81.8%. lts concluded that this insect represents a highly digestible protein source.
